paleo pancakes
I'm not much of a recipe-follower, but I do spend a lot of time in the kitchen combining vegetables and meats and spices in my cast iron skillet. I'd heard of paleo pancakes and knew that they were loosely a banana-flax-egg combination. Here's my take on them.
Ingredients:
(3-4 teaspoons) flax seeds
(1 teaspoon) cocoa powder
(2) eggs
(1) banana
Mash the banana with a fork, then fold in the flax seeds.
Then the cocoa powder and eggs.
Put the batter in a skillet on medium heat. Melt the butter before pouring.
Flip once the pancakes are firm and lightly browned on one side, and cook to the same degree on the other side.
I like to put powdered sugar and agave nectar on mine.
Variations in the batter or on top can include: cinnamon, brown sugar, maple syrup, peanut butter, jelly, and butter. Make it your own!
